These copycat Starbucks egg bites are way healthier than the real thing, and only use three ingredients.

Three Ingredient Egg Bites (Easy and Healthier than Starbucks!)
Prep time: 5 minutes
Cook time: 30 minutes
Servings: 12 egg bites
INGREDIENTS
- 9 eggs
- ½ cup cottage cheese
- ½ cup shredded cheddar cheese
- Optional toppings: Fresh chopped herbs, bell pepper, or bacon
DIRECTIONS
- Preheat oven to 300F.
- Combine eggs, cottage cheese, and cheddar cheese into a nutribullet or blender and blend until mixture is smooth in texture.
- Prepare a muffin pan by greasing the muffin cups with coconut oil or butter.
- Fill each muffin cup half way up with your egg mixture, these will rise considerably during baking and then “shrink” back down while they cool.
- If using toppings, add them to each muffin cup, letting them sink in and float on top.
- Bake in the oven for 30 minutes.
- Remove when they are done (a toothpick should come out clean) and let cool on a wire rack or simply in the muffin pan until they shrink back down and are cool enough to transfer.

NOTES
- This is one of those recipes where more is better. I never measure out the cottage cheese or the cheddar cheese, instead I just take a huge handful of cheese, and lop a ton of cottage cheese in. Sometimes I go light with it, sometimes I go heavy.. it always turns out good.
- I suggest using whole milk cottage cheese but any variation you like will work just fine.
- If you have kids these will go quickly in your house, don’t hesitate to double the recipe!
- If you prefer for your egg cup to be more well done add a few minutes onto the backing time.
- You can store these in the fridge for 5 days, or freeze them for 2 months.
- Reheat in a microwave or air fryer, or let frozen egg bites thaw in the fridge. We usually eat these cold because we are both lazy and they happen to taste good that way!
