This is not the Korean beef you had with your friends in K-town. This is the Korean beef you make for yourself when you’re craving the savory umami of Korean style flank steak but have a freezer full of ground beef or ground turkey.
Korean Beef + Broccoli

Cook time: 15 minutes
INGREDIENTS
- 1 pound ground beef or ground turkey
- 1 to 2 tablespoons sesame oil
- 3 garlic cloves, minced
- 1/3 cup brown sugar (You could do less. Or more. Trust your instincts.)
- 1/4 cup soy sauce
- 1/2 teaspoon freshly ground ginger, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon freshly ground black pepper
- 5 to 10 green onions, finely sliced
- 2 cups of broccoli
DIRECTIONS
- Heat a large wok or skillet (I use a cast iron) over medium heat and add in the sesame oil and minced garlic for about 30 seconds.
- Add in the ground meat and stir occasionally to break up the meat until cooked. Drain the fat (over the sink!)
- Lower the heat and add in the soy sauce, brown sugar, ginger, ground pepper and red pepper flakes. Stir everything together.
- Bring to a simmer while you stir fry the broccoli in a wok or another hot pan. The broccoli shouldn’t take more than 5 minutes to cook, we like it crunchy, not soggy.
- Serve over steamed basmati rice and top with a lot of green onions.
NOTES
- Do not hold back on the green onions, they are as important to this meal as the soy sauce. I’m serious, if you make this without the green onions you are legit missing out!
